Ingredients
  

  • 2 Waffles Per sandwich
  • 1 Cup Cooked chicken Canned, left over, freshly cooked
  • 4 Tbsp Mayonnaise or Greek yogurt
  • 2 Tbsp Mustard Dijon or yellow
  • 2 Stalks Celery Chopped
  • 1 Tbsp Pickle relish or chopped pickles
  • 1 Tsp Onion powder Optional
  • 1 Tsp Garlic powder Optional
  • 1 Tsp Hot honey or Maple syrup Optional
  • Salt and pepper to taste
Infusion
  • 1 Tsp Infused oil

Method
 

Prepare the Waffles
  1. Toast the two frozen waffles according to package directions until they are crisp. Set aside.
Prepare the Chicken Salad
  1. In a medium bowl, combine the cooked and diced chicken, mayonnaise, infused oil, mustard, pickle relish (if using), onion powder, salt, and pepper. Stir thoroughly until the chicken is evenly coated and the mixture is creamy.
Assemble the Sandwich
  1. Place the chicken salad mixture on one of the toasted waffles.
Finish and Serve
  1. Top with the second waffle. If desired, lightly drizzle the top waffle with maple syrup or hot honey for an extra sweet-and-spicy layer.
